Broccoli with Anchovy
Two flavours that just go brilliantly together, the anchovy really amps up the flavour of the broccoli. Finely chop a clove of garlic (and a red chilli if you like spice). Cook gently in lots olive oil until softened, then add 2-3 anchovies (more or less depending on how much you love anchovy). Turn the heat down as low as possible so the anchovies dissolve in the oil rather than frying.
Break broccoli into florets, wash and blanch in boiling salted water until just cooked. Drain and toss in the garlic anchovy oil mixture. You can also make this into a pasta - just add cooked pasta in to the mix, use more oil and anchovy in the recipe and use a bit of the pasta water to help the sauce coat everything nicely. Topping it with some breadcrumbs fried gently in olive oil adds a wonderful crunch that really rounds out this recipe.
