Roast Hispi Cabbage
You may have had this in restaurants, it’s an easy way to make a cabbage into the star of the show, and is all about bringing out the natural flavour of the vegetable. The key is to have your oven really hot and get the cabbage deeply browned (almost burnt) to get the full flavour.
Preheat our oven to 260 degrees C and line a rimmed baking sheet with aluminum foil or parchment paper. Cut a hispi cabbage into 6-8 wedges depending on size. Arrange cabbage wedges on baking sheet in a single layer. Drizzle with olive oil on one side, then season with salt and pepper. Flip wedges, drizzle other side with oil, and season with salt and pepper.
Place baking sheet in oven and roast until lightly browned, about 10 minutes. Flip wedges and continue roasting until tender and deeply browned, another 10 minutes, then serve.
