Mushroom Pesto

A delicious pasta sauce packed with umami. Put mushrooms in a food processor with grated pecorino (or parmesan or manchego), toasted walnuts, garlic, parsley and olive oil. Adjust flavour - add more cheese if you want it saltier. Pulse until it has a finely chopped texture. Stir into hot pasta and add ground black pepper. You can also spread on a baguette to complement a steak or sausage sandwich.
