Radish Recipes
Radish, Cucumber and Couscous salad
1 cup couscous
1 large cucumber, diced or thinly sliced
1 bunch radishes, thinly sliced
¼ cup fresh mint or dill, chopped
½ cup Greek yogurt
1 tbsp olive oil
1 tbsp lemon juice
1 clove garlic, minced (optional)
Salt and black pepper, to taste
Prepare the couscous according to instructions - the giant kind is best for a salad, but any sort will do. Fluff with a fork and set aside to cool.
Mix the sliced cucumbers, radishes and herbs in a bowl. You can also add a few tomatoes or peppers if you have some spare. Mint is best, but feel free to use almost any fresh herb here - parsley will also be delicious.
Whisk together yoghurt, oil, lemon juice, garlic, salt and pepper to make a dressing.
Place the dressing in a bowl, then top with the couscous and finally the vegetables.
